DIRECTIONS

1. Preheat oven to broil. Line a baking tray with aluminum foil and set aside.

2. Cook Pineapple: Add the pineapple, honey, and one teaspoon oil to a medium mixing bowl and stir gently to coat. Spread pineapple in a single layer onto the prepared baking tray and broil until charred in spots (about 10-12 minutes).

3. Make Sauce: Finely chop ONLY half of the mint (use the other half in your morning smoothie or a tiny mojito!) and stir into the yogurt. Place in the freezer.

To Serve: Remove yogurt from the freezer and stir. Divide charred pineapple between two bowls and top each with a dollop of yogurt.

DIRECTIONS

1. Make crisp topping: In a sauté pan over medium heat, add one pat butter and granola. Cook, stirring, for 2 minutes. Remove to a small bowl.

2. Cook blueberries: In the same pan over medium heat, add the remaining butter, blueberries, brown sugar, a pinch of salt, and a very light pinch of cinnamon (optional). Cook, stirring, for 2 minutes until the blueberries begin to break down

To Serve: Divide warm blueberries between two bowls and top with granola. Serve

DIRECTIONS

1. Make caramel sauce: In a high sided saucepan over medium-low heat, add the heavy cream, brown sugar, butter, and pinch of salt. Cook, frequently whisking, until thickened (about 7 minutes). Note: about 3 minutes into cooking, the mixture will start bubbling frantically. This is normal; just keep whisking!

2. Spoon caramel sauce into another dish and allow it to cool for 2 minutes.

To Serve: Sprinkle a pinch of salt over caramel sauce and serve alongside apple slices for dipping!
