Rigatoni with sausage in red sauce

Rigatoni with sausage and red sauce is the perfect way to get all your nutrition groups: carbs, veggies and protein. This recipe by by Chef James Tahhan calls for celery, red wine, sausages, tomatoes and more!

Ingredients

1 pound rigatoni pasta
3 Italian sausages
1/2 onion
3 cloves of garlic
2 bunches of celery
1 carrot
1/4 bottle of red wine
Whole red pepper
32 oz. crushed tomatoes
Whole Parmesan cheese for grating
3 bay leaves

Directions

In a deep pot begin to lightly brown the sausages over medium heat. Then remove them and add the onion, celery, carrot, garlic and bay leaves. Cook for 10 minutes then add the red wine, brought to a boil and reduce by half. Then add the crushed tomatoes. We return the sausage to the pot and let cook for about 30-40 minutes over medium heat. Serve over rigatoni pasta and grate Parmesan cheese.
