The day that Pisco Sour lovers all over the world have been waiting for is here! According to GoPeru,"the first Saturday of every February is the official "Día Nacional del Pisco Sour," the main producing regions of the liquor are Lima, Ica, Arequipa, Moquegua and Tacna in Peru. This day is naturally a more important event in these departments, with local viñedos and bodegas pisqueras (vineyards and pisco wineries) taking part in the festivities." In honor of the upcoming celebration take a look at some delicious and refreshing recipes of Peru’s signature drink.

Chicha Sour Cocktail at GK Bistronomie

Ingredients

  • 2 oz of Chicha infused la caravedo Pisco
  • 1 oz of house made pineapple cinnamon syrup
  • 1 oz fresh squeezed lime
  • 1 egg white
  • Angostura

Method: Add all ingredients to shaker except for angostura. Shake once to obtain the creaminess out of the egg white then add ice and shake it again. Double strain into a tall old fashioned glass garnished with 3 drops of angostura.

Sesame Sour 15 from Sushisamba

A traditional sour made with Japanese whisky, lemon, sugar, egg white and toasted sesame.

Ingredients:

  • 1.5 oz. Hibiki 12YO Whisky
  • .75 oz. lemon juice
  • .75 oz. sugar syrup
  • 1 tsp. toasted black sesame oil
  • black sesame seeds

Method: Place all ingredients in a shaker and dry shake (no ice) for approximately 10 seconds or until the oil and egg white have emulsified completely Add a large scoop of ice and re-shake, double strain into rock glass with cubed ice and garnish with a light dusting of black sesame seeds.

Habanero Pisco Sour

Ingredients

  • 2 oz. Pisco
  • 1 oz. lime juice
  • 1 oz. habanero infused simple syrup
  • 1 egg white
  • ice
  • Angostura bitters

Method: Mix the Pisco, lime juice, simple syrup, and egg white in a shaker. Add ice and shake for 1 minute to create a thick egg white foam. For full recipe check out piscotrail.com

Ingredients

  • 2 oz Pisco
  • 1 oz Sour mix
  • ¾ oz lime juice
  • ½ oz egg white (in order to create the foamy top make sure that you use only egg white)
  • ½ oz simple syrup
  • Dash of angostura bitters

Method: Pour all ingredients except angostura bitters into shaker with ice, shake vigorously and pour to rock glass without ice. Add 3 drops of Angostura bitters on top of the foam created by the egg white.
