We gotta admit it. We’re obsessed with Princess House’s Mi Cocina Casserole. It’s perfect for stovetop cooking, roasting meats and veggies in the oven and even for cooking on your grill. It’s a cast iron casserole that comes with a roasting rack and an infusion tube. It’s so versatile and it totally makes you feel like you’re a professional chef. One of the things that caught our attention the most was the infusion tube, and although at first we thought “Well, this just makes things way more complicated” and “What the heck will we use that for?” we have to say, the tube is our favorite tool now!

So how do you use it? We’ve found the perfect recipe created by Chef Stephen Chavez from LatinoFoodie.com for the most juicy and delicious rotisserie chicken with a Latino twist that will have you working that infusion tube like a pro. It’s super easy and tasty and perfect for any special occasion. (We personally think you should give your mom a break on Mother’s Day and offer to do the cooking with this recipe!) Here’s what you’ll need:

Ingredients:

1 (5 lb.) whole chicken with skin, innards removed

For the dry rub:

1 Tbsp. chile powder

1 ½ tsp. onion powder

1 tsp. smoked paprika

1 tbsp. kosher salt

1 ½ tbsp. freshly ground black pepper

For the infuser:

1/2 navel orange, quartered

1 tbsp. dry rub

3 large garlic cloves, peeled and crushed

Chicken Broth

Preparation:

  1. Preheat oven to 375 degrees. Make sure to remove the top rack of the oven to allow space for the chicken.
  2. Rinse chicken, pat dry with paper towels. This is an important step as otherwise your dry rub will not stick to the chicken.
  3. In a small bowl, combine all the seasonings for the dry rub. Begin to rub the seasoning all over and under the chicken skin. Reserve one tablespoon of rub mixture for the infuser.
  4. Place garlic, dry rub, oranges and chicken broth in the infuser and fill to no more than two-thirds full. Princess House put a “Max Line” inside the infuser to serve as a guide. This is where all the magic happens. All the seasoning and broth that you filled the infuser with will steam throughout the cavity of the chicken, imparting it with delicious flavor and moisture.
  5. Place infuser on a solid surface. Place chicken vertically onto the Infuser. Be careful not to tip the bird over.
  6. Place Roasting Rack inside Casserole, then place Infuser with chicken in the center of the roasting rack. The Rack allows fat to drain away from the chicken while it cooks.
  7. Place chicken in oven and roast for about one hour and 15 minutes, or until the internal temperature registers 165° in the breast area and 180° in the thigh or until the thigh juice runs clear when stabbed with a sharp knife.
  8. Remove from oven and let rest for 10 minutes before carving. Did you know you could also prepare this recipe on your BBQ grill? The cast iron casserole is safe for use on the grill and this recipe is sure to impress guests at your next outdoor get together.
