When it comes to comfort food, a classic is a grilled cheese sandwich. But if you want to a fancier twist to the classic grilled cheese sandwich then this recipe by Chef James Tahhan is perfect, as it features three cheeses (cheddar, Swiss and mozzarella) coupled with mushrooms and onions.

Ingredients

2 slices of rye bread
2 slices of cheddar cheese
2 slices of Swiss cheese
2 slices of mozzarella cheese
1 red onion
1 cup mushrooms

Directions

We take the bread slices and season with olive oil, salt and pepper. Then place it in a pan a little olive oil and cook the onions with the mushrooms until they are golden brown. Once ready the mixture of mushrooms and onions take a slice of bread, place 1 tablespoon of this mixture, followed by slices of cheese and then over another tablespoon of the mixture, we close with another slice of bread and took it to a or a grill pan over medium heat for 3 minutes on each side.
