Pistachio crusted salmon

Salmon is well-known for being healthy, as the fish is rich in omega-3s and is a heart healthy alternative to other meats. This recipe by Chef James Tahhan offers a unique twist to the dish, as he prepares the salmon with a pistachio crust.

Ingredients

4 fillets of salmon (1lb)
1 cup crushed pistachios
1/4 cup olive oil
Juice of 1 lemon
2-3 tablespoons mustard
Lemon Peel
1 cup balsamic vinegar (reduced)
2 tablespoons sugar
Finely chopped chives

Lining:

2 carrots (julienned bleached)
2 zucchini (julienned blanched)

Directions

Mix the mustard and lemon in a bowl, then refinish the salmon fillets with the mixture using a pastry brush. In another bowl mix the olive oil with crushed pistachios, season with salt and pepper and then empanizamos fillets with crushed pistachio. We put on a baking sheet and bake for about 20 minutes at 400 degrees.

Serve with reduced balsamic vinegar and onions on a bed of vegetables.
